Frozen Watermelon Lemon Cream Tarts

Ingredients
  

Crust
  • 1 cup graham cracker crumbs
  • 1/4 cup butter, melted
  • 2 tablespoons sugar
Filling
  • 2 cups watermelon, pureed
  • 1/2 cup lemon juice
  • 1 cup heavy cream
  • 1/4 cup powdered sugar

Method
 

Prepare the crust
  1. In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined.
  2. Press the mixture into the bottom of tart pans.
  3. Chill in the refrigerator while preparing the filling.
Make the filling
  1. In a blender, combine pureed watermelon and lemon juice.
  2. In a separate bowl, whip heavy cream and powdered sugar until soft peaks form.
  3. Fold the watermelon mixture into the whipped cream until well combined.
Assemble the tarts
  1. Pour the filling into the prepared crusts.
  2. Freeze for at least 4 hours or until set.
  3. Serve chilled and enjoy!
