Method
Prepare the crust
- In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined.
- Press the mixture into the bottom of tart pans.
- Chill in the refrigerator while preparing the filling.
Make the filling
- In a blender, combine pureed watermelon and lemon juice.
- In a separate bowl, whip heavy cream and powdered sugar until soft peaks form.
- Fold the watermelon mixture into the whipped cream until well combined.
Assemble the tarts
- Pour the filling into the prepared crusts.
- Freeze for at least 4 hours or until set.
- Serve chilled and enjoy!
