Flaky Cranberry Brie Tartlets with Fresh Rosemary

Ingredients
  

  • 1 sheet all-butter puff pastry, thawed but chilled (approx 8-10 oz)
  • 8 oz creamy French brie cheese wheel, cut into 24 cubes
  • 3/4 cup whole berry cranberry sauce (homemade or premium jarred)
  • 1/3 cup pecans or walnuts, finely chopped
  • 2 tbsp pure wildflower honey (for drizzling)
  • 1 tbsp fresh rosemary needles, finely minced
  • 1/2 tsp fresh orange zest
  • 1/4 tsp flaky sea salt

Method
 

  1. Preheat your oven to 375°F (190°C). Lightly grease a standard 24-cup mini muffin tin with olive oil cooking spray.
  2. Unroll cold puff pastry onto a lightly floured work surface. Using a pizza wheel, cut pastry into 24 equal squares (4 cuts by 6 cuts). Gently tuck each square into a mini muffin cup, allowing corners to flare upward above the rim.
  3. Place one cube of brie cheese into the center of each puff pastry cup. Top with a generous teaspoon of cranberry sauce, followed by chopped pecans and a pinch of fresh orange zest.
  4. Bake for 14 to 16 minutes until puff pastry edges are deeply golden, crisp, and brie is melted and bubbling.
  5. Let rest in muffin tin for 3 minutes so cheese sets slightly. Transfer tartlets to a serving board. Drizzle immediately with warm wildflower honey, scatter fresh minced rosemary, and finish with a touch of flaky sea salt. Serve warm.
