Festive Turkey Cheese Ball

Ingredients
  

Savory Cheese Base
  • 16 oz (2 blocks) cream cheese softened to room temperature
  • 2 cups sharp yellow cheddar cheese freshly grated for best texture
  • 4 green onions (scallions) finely minced green and white parts
  • 1 tbsp Worcestershire sauce for savory umami depth
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika adds rich autumn color and subtle smokiness
  • 1/4 tsp black pepper freshly cracked
Turkey Coating & Feathers
  • 1.5 cups toasted pecan halves & pieces for coating body and tail feather fan
  • 1 cup pretzel sticks for tail feather structure
  • 1 Whopper malt ball or large pecan for turkey head or small rolled cheese ball
  • 1 candy eye pair or black peppercorns for eyes
  • 1 small wedge cheddar or yellow pepper for beak cut into triangle
  • 1 thin slice red bell pepper for turkey wattle
For Serving
  • 1 box assorted artisan crackers butter crackers, water crackers, and multigrain
  • 1 bunch fresh carrot & celery sticks cut into dippers

Method
 

Mix & Shape the Cheese Body
  1. In a large bowl using a hand mixer or wooden spoon, beat the softened cream cheese until smooth and creamy. Add the grated sharp cheddar, minced green onions, Worcestershire sauce, garlic powder, smoked paprika, and black pepper. Beat until completely combined and evenly distributed.
  2. Transfer the mixture onto a large sheet of plastic wrap. Reserve about 2 tablespoons of cheese mixture if making a cheese head, and shape the remaining bulk into a smooth, compact ball. Wrap tightly in plastic wrap and chill in the refrigerator for at least 1 hour (or up to 24 hours) until firm.
Coat & Assemble the Feathers
  1. Unwrap the chilled cheese ball and place on your serving platter. Press toasted pecan pieces firmly around the sides and front to coat the turkey body, leaving the back area slightly clear for tail feathers.
  2. To assemble the majestic tail fan: Insert pretzel sticks in an arched semi-circle fan across the back of the cheese ball. Fan out rows of toasted pecan halves and oval artisan crackers between and behind the pretzels to build dense, dramatic holiday tail plumage.
Face Details & Serving
  1. To create the turkey face: Use the reserved cheese ball (or a large pecan half). Attach the candy eyes (or peppercorns), yellow cheese triangle beak, and red pepper wattle using a tiny dab of cream cheese as edible glue. Gently press the head onto the front center of the cheese ball.
  2. Surround the turkey cheese ball with an abundant arrangement of buttery crackers, pretzel crisps, and fresh vegetable crudités. Serve slightly chilled with small spreader knives!
