Ingredients
  

Falafel Mixture
  • 1 cup chickpeas cooked or canned
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 1 tablespoon parsley chopped
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon salt
  • 1 tablespoon flour for binding
Toppings
  • 1 cup tzatziki for serving
  • 1 cup salad mixed greens or your choice

Method
 

Prepare the Falafel Mixture
  1. In a food processor, combine chickpeas, onion, garlic, parsley, cumin, coriander, salt, and flour. Blend until smooth.
  2. Transfer the mixture to a bowl and let it rest for 10 minutes.
Cook the Waffles
  1. Preheat the waffle maker. Once hot, spray with cooking spray.
  2. Scoop the falafel mixture into the waffle maker and cook according to the manufacturer's instructions, usually about 5-7 minutes.
Serve
  1. Serve the falafel waffles warm with tzatziki and salad on the side.
