  • 1 cup Unsalted Butter cold and cubed
  • 1 teaspoon Salt
  • 1 cup Ice Water

Method
 

Prepare the Dough
  1. In a mixing bowl, combine gluten-free flour and salt.
  2. Add cold, cubed butter and mix until the mixture resembles coarse crumbs.
  3. Gradually add ice water, mixing until a dough forms.
Roll and Fold
  1. Turn the dough onto a floured surface and roll it out into a rectangle.
  2. Fold the dough into thirds, then roll out again. Repeat this process three times.
Bake
  1. Preheat the oven to 400°F (200°C).
  2. Place the rolled pastry on a baking sheet lined with parchment paper.
  3. Bake for 15-20 minutes or until golden brown.
