Dough
  • 3 cups all-purpose flour
  • 1 cup warm water
  • 2 teaspoons active dry yeast
  • 1 teaspoon salt
  • 2 tablespoons sugar
  • 2 tablespoons olive oil
Crunch Topping
  • 1 cup rice flour
  • 1 cup water
  • 1 teaspoon yeast
  • 1 teaspoon salt

Method
 

Prepare the Dough
  1. In a mixing bowl, combine warm water, sugar, and yeast. Let it sit for 10 minutes until frothy.
  2. Add flour, salt, and olive oil to the yeast mixture. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 10 minutes until smooth.
  4. Place the dough in a greased bowl, cover, and let it rise for 1 hour or until doubled in size.
Prepare the Crunch Topping
  1. In a separate bowl, mix rice flour, water, yeast, and salt until smooth. Let it rest for 30 minutes.
Bake the Bread
  1. Preheat the oven to 375°F (190°C).
  2. Shape the risen dough into a loaf and place it on a baking sheet.
  3. Spread the crunch topping over the dough.
  4. Bake for 25 minutes or until golden brown.
