Bake the Shortbread Base
- Preheat oven to 350°F (175°C). Line a 9x13-inch metal baking pan with parchment paper, leaving an overhang on the sides for easy lifting.
- In a medium mixing bowl, whisk together melted butter, all-purpose flour, powdered sugar, and salt until a soft, fragrant dough forms.
- Press the dough evenly across the bottom of the prepared pan into a smooth, compact layer using your fingertips or the flat bottom of a cup.
- Bake the crust at 350°F for 18 to 20 minutes until the edges are lightly golden and the top is set. Remove from oven.
Assemble & Bake the Pecan Topping
- While the crust bakes, whisk the eggs, brown sugar, pure maple syrup, melted butter, pure vanilla, and sea salt in a large bowl until smooth and glossy.
- Stir in the 2 1/2 cups of pecans until every nut is well-coated in the velvety brown sugar mixture.
- Pour the pecan filling immediately over the warm par-baked crust, gently nudging the pecans with a spatula to ensure an even distribution from corner to corner.
- Return pan to the 350°F oven and bake for 25 to 30 minutes, until the filling is puffed, bubbling along the edges, and set in the center.
Cool, Slice & Garnish
- Sprinkle lightly with flaky Maldon sea salt while the caramel is still hot.
- Allow the bars to cool completely to room temperature in the pan (about 2 hours), then chill in the refrigerator for 30 minutes for the cleanest bakery-style cuts.
- Use the parchment paper overhang to lift the entire slab onto a cutting board. Slice into 16 generous squares or 24 bite-sized party triangles and enjoy!
