Ingredients
  

Chocolate Cake
  • 1 cup almond flour
  • 1/2 cup cocoa powder
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil melted
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup plant-based milk
Strawberry Buttercream
  • 1 cup strawberries mashed
  • 1/2 cup coconut cream
  • 1/4 cup powdered sugar

Method
 

Prepare the Cake
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine almond flour, cocoa powder, baking powder, and salt.
  3. In another bowl, mix together maple syrup, melted coconut oil, and plant-based milk.
  4. Combine the wet and dry ingredients until smooth.
  5. Spread the batter onto the prepared baking sheet and bake for 15 minutes.
  6. Let the cake cool completely before rolling.
Prepare the Buttercream
  1. In a bowl, mix the mashed strawberries, coconut cream, and powdered sugar until smooth.
Assemble the Swiss Roll
  1. Once the cake is cool, carefully roll it up with the parchment paper.
  2. Unroll the cake and spread the strawberry buttercream evenly over the surface.
  3. Roll the cake back up and refrigerate for at least 30 minutes before serving.
