- Let the cake cool completely before rolling.
Prepare the Buttercream
- In a bowl, mix the mashed strawberries, coconut cream, and powdered sugar until smooth.
Assemble the Swiss Roll
- Once the cake is cool, carefully roll it up with the parchment paper.
- Unroll the cake and spread the strawberry buttercream evenly over the surface.
- Roll the cake back up and refrigerate for at least 30 minutes before serving.
