Strawberry Filling
  • 2 cups fresh strawberries sliced
  • 1/4 cup sugar
  • 1 tablespoon lemon juice

Method
 

Prepare the Cookie Base
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
  2. Add the egg and vanilla extract, mixing until well combined. In a separate bowl, whisk together the flour and baking powder, then gradually add to the wet ingredients.
  3. Roll out the dough and use a cookie cutter to cut out shapes. Place on a baking sheet and bake for 10 minutes or until golden.
Make the Strawberry Filling
  1. In a bowl, combine sliced strawberries, sugar, and lemon juice. Let it sit for 10 minutes to macerate.
Assemble the Cookie Boats
  1. Once the cookies have cooled, create a small indentation in the center of each cookie. Fill with the strawberry mixture and top with whipped cream.
