Ingredients
  

Stuffing
  • 1 cup Rice uncooked
  • 1 can Chickpeas drained and rinsed
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 4 medium Zucchini hollowed out

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a pot, sauté the onion and garlic until translucent.
  3. Add the rice, chickpeas, cumin, paprika, salt, and pepper. Stir to combine.
  4. Fill the hollowed zucchini with the stuffing mixture.
  5. Place the stuffed zucchini in a baking dish and cover with foil.
  6. Bake for 30-40 minutes until the zucchini is tender.
