Ingredients
  

Vegetables
  • 2 cups diced potatoes preferably Yukon Gold
  • 1 cup bell pepper diced
  • 1 cup onion diced
Proteins
  • 4 slices bacon chopped
  • 4 large eggs for frying
Seasonings
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika

Method
 

Cooking the Hash
  1. In a skillet, cook the bacon until crispy. Remove and set aside.
  2. In the same skillet, add diced potatoes and cook until golden brown.
  3. Add bell pepper and onion, cooking until softened.
  4. Season with salt, pepper, and paprika.
  5. Create wells in the hash and crack an egg into each well. Cover and cook until eggs are set.
