Ingredients
  

Salad Ingredients
  • 4 fillets salmon skinless
  • 4 cups mixed greens
  • 1 cup cherry tomatoes halved
  • 1 avocado sliced
  • 1/4 cup red onion thinly sliced
  • 1/4 cup olive oil for dressing
  • 2 tablespoons lemon juice freshly squeezed

  • to taste pepper

Method
 

Cooking the Salmon
  1. Preheat the oven to 400°F (200°C). Season the salmon fillets with salt and pepper.
  2. Place the salmon on a baking sheet and bake for 12-15 minutes until cooked through and crispy.
Preparing the Salad
  1. In a mixing bowl, combine the mixed greens, cherry tomatoes, avocado, and red onion.
  2. In a small bowl, whisk together olive oil and lemon juice. Pour over the salad and toss to combine.
Serving
  1. Once the salmon is cooked, flake it into large pieces and add it to the salad. Serve immediately.
