Crispy Masala Dosa

Ingredients
  

Dosa Batter
  • 1 cup rice soaked
  • 1/3 cup urad dal soaked
  • 1 cup water for blending
  • 1 tsp salt
Potato Filling
  • 2 medium potatoes boiled and mashed
  • 1 medium onion finely chopped
  • 1 tsp mustard seeds
  • 1 tsp turmeric powder
  • 2 green chilies finely chopped
  • 2 tbsp oil for cooking
  • to taste salt

Method
 

Prepare Dosa Batter
  1. Blend soaked rice and urad dal with water until smooth. Ferment for 8 hours or overnight.
Make Potato Filling
  1. Heat oil in a pan, add mustard seeds, and let them splutter. Add onions, green chilies, and sauté until onions are translucent. Add turmeric and mashed potatoes, mix well, and season with salt.
Cook Dosa
  1. Heat a non-stick skillet, pour a ladle of batter, and spread it into a thin circle. Cook until the edges lift, place some potato filling in the center, fold, and serve hot.
