Crispy Honey Glazed Apple Brie Crostini with Fresh Thyme

Ingredients
  

  • 1 long crusty French baguette sliced diagonally into 1/2-inch rounds (about 20-24 slices)
  • 3 tbsp extra virgin olive oil for brushing bread
  • 1 clove garlic peeled and halved for light rubbing on warm toast
  • 8 oz double cream French Brie cheese rind left on or removed, sliced into bite-size pieces
  • 2 medium Honeycrisp or Gala apples cored and very thinly sliced into half-moons
  • 1 tbsp fresh lemon juice to toss apples and prevent browning
  • 0.33 cup pure wildflower or clover honey warmed slightly for easy drizzling
  • 0.33 cup chopped walnuts or pecans lightly toasted
  • 1 tbsp fresh thyme leaves stripped from stems
  • 1 pinch flaky Maldon sea salt and freshly cracked black pepper for finishing garnish

Method
 

  1. Preheat oven to 400°F (200°C). Arrange baguette slices in a single layer on a large rimmed baking sheet. Brush both sides lightly with extra virgin olive oil.
  2. Bake the baguette slices for 7 to 9 minutes until golden and crisp around the edges. (Optional: lightly rub the top of each hot toast with the cut side of a garlic clove for aromatic depth).
  3. Toss thinly sliced Honeycrisp apples with 1 tablespoon of lemon juice in a small bowl to preserve brightness.
  4. Top each toasted crostini with a thick slice of creamy brie cheese. Return to the oven for 2 to 3 minutes, just until the brie begins to soften and melt gently over the crusty bread.
  5. Remove from the oven. Artfully arrange 2 to 3 thin apple slices in a delicate fan over the warm brie.
  6. Sprinkle toasted chopped walnuts and fresh thyme leaves over the crostini. Generously drizzle warm wildflower honey across the tops, finish with a sprinkle of flaky sea salt and cracked black pepper, and serve warm immediately!
