Crispy Halal Beef Bacon Wrapped Dates

Ingredients
  

  • 24 large plump Medjool dates, pitted
  • 12 slices 100% Halal beef bacon (or smoked turkey bacon), cut in half crosswise
  • 4 oz creamy goat cheese (chèvre) or cream cheese, softened
  • 24 pieces roasted whole almonds or pecan halves (for interior crunch)
  • 2 tbsp pure clover honey or pure maple syrup
  • 1/4 tsp crushed red pepper flakes (optional for hot honey kick)
  • 1 tbsp fresh rosemary or thyme, finely minced
  • 1 pinch flaky sea salt

Method
 

  1. Preheat oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper or a wire cooling rack set inside the baking sheet for maximum crispiness.
  2. Using a paring knife, make a lengthwise slit down one side of each Medjool date. Remove the pit (if not already pitted) and gently open the date cavity.
  3. Spoon about 1 teaspoon of softened goat cheese into each date cavity, then press one whole roasted almond or pecan half into the center of the cheese.
  4. Close the date gently around the filling. Wrap one half-slice of Halal beef bacon snugly around the middle of each date, overlapping the ends.
  5. Secure each date through the bacon seam with a wooden toothpick. Arrange seam-side down on the prepared baking sheet spaced 1 inch apart.
  6. Bake at 400°F (200°C) for 15 to 18 minutes, turning the dates once at the 10-minute mark so the beef bacon crisps evenly on all sides.
  7. In a small dish, warm the honey with red pepper flakes and fresh minced rosemary for 20 seconds in the microwave.
  8. Brush the sizzling warm bacon wrapped dates generously with hot honey glaze, sprinkle with flaky sea salt, and serve warm!
