Crispy Air-Fryer Halal Mozzarella Sticks

Ingredients
  

  • 12 sticks certified halal whole milk mozzarella string cheese cut in half horizontally for 24 bite-sized sticks
  • 1/2 cup all-purpose flour
  • 2 large eggs, well beaten
  • 1 tbsp milk whisked into eggs
  • 1.5 cups Japanese panko breadcrumbs for maximum crunch
  • 1/3 cup freshly grated parmesan cheese blended into breadcrumbs
  • 1.5 tsp Italian herb seasoning (oregano, basil, thyme)
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika for golden color
  • 1/2 tsp fine sea salt
  • 1-2 tbsp olive oil or avocado oil cooking spray for crisping crust
  • 1 cup warm marinara or pizza sauce for dipping

Method
 

  1. Unwrap mozzarella string cheese sticks and slice each in half crosswise to create 24 evenly sized sticks. Place on a baking sheet and freeze for 30 minutes until rock solid. (Freezing is mandatory to prevent blowouts during cooking!)
  2. Set up a breading station with three shallow bowls: Bowl 1: Flour with a pinch of salt. Bowl 2: Eggs whisked with 1 tablespoon milk. Bowl 3: Panko breadcrumbs tossed with grated parmesan, Italian seasoning, garlic powder, paprika, and sea salt.
  3. Double-dredge the cheese: Roll each frozen cheese stick in flour, dip into egg wash, then coat in seasoned panko. Dip BACK into egg wash and coat a second time in panko, pressing firmly so breadcrumbs adhere completely without any exposed cheese.
  4. Return double-breaded mozzarella sticks to the freezer for at least 1 hour (or up to overnight) until frozen solid.
  5. Preheat air fryer to 390°F (200°C) for 3 minutes. Generously mist the air fryer basket with olive oil spray.
  6. Arrange frozen mozzarella sticks in a single layer with space between them. Do not overcrowd (cook in two batches if necessary). Spray the tops generously with olive oil spray.
  7. Air-fry at 390°F (200°C) for 6 to 8 minutes, flipping gently with silicone tongs at the 4-minute mark, until the crust is deeply golden-brown and crunchy. Keep a close eye during the final minute to remove right as cheese begins to soften before any bursting happens.
  8. Let rest in the basket for 2 minutes to allow cheese to settle. Serve immediately piled high with warm marinara sauce for dipping!
