Ingredients
  

  • 8 oz fresh goat cheese (chèvre) softened slightly to room temperature
  • 4 oz brick cream cheese softened (mellows tartness and creates pliable truffle texture)
  • 2 tbsp pure clover honey plus extra for drizzling before serving
  • 0.25 tsp fine sea salt
  • 0.25 tsp freshly ground black pepper
  • 0.75 cup pecans toasted and very finely chopped
  • 0.75 cup dried cranberries (craisins) very finely chopped
  • 2 tbsp fresh rosemary needles minced very finely
  • 1 tsp fresh orange zest optional, brightens holiday flavors
  • 24 pieces salted pretzel sticks or cocktail picks for easy mess-free grab-and-go serving
  • 1 tbsp warm clover honey for finishing drizzle

Method
 

  1. Toast the Pecans: Preheat oven or toaster oven to 350°F (175°C). Spread raw pecans in a single layer on a small baking sheet and toast for 6 to 8 minutes until golden-brown and fragrant. Allow to cool completely, then finely mince on a cutting board.
  2. Prep the Coating: Finely chop the dried cranberries and fresh rosemary. In a wide, shallow bowl or rimmed plate, combine chopped pecans, dried cranberries, minced rosemary, and orange zest. Toss thoroughly with a fork so the colors and textures are evenly distributed.
  3. Whip the Cheese Base: In a medium mixing bowl, combine softened goat cheese, cream cheese, 2 tablespoons honey, sea salt, and black pepper. Beat with a wooden spoon or hand mixer on low speed for 1 to 2 minutes until smooth, creamy, and completely uniform.
  4. Chill Briefly for Easy Shaping: Place the bowl of cheese mixture in the refrigerator for 15 to 20 minutes to firm up slightly. This makes rolling uniform spherical truffles effortless and mess-free.
  5. Portion & Roll into Truffles: Use a small 1-tablespoon cookie scoop to portion out equal-sized balls of cheese (approx. 24 portions). Roll each portion between the palms of your hands to form smooth 1-inch balls.
  6. Coat in Cranberry-Pecan-Rosemary: Drop each cheese ball directly into the shallow bowl of coating mixture. Roll gently, pressing lightly so the colorful cranberries, crunchy pecans, and green rosemary adhere firmly to cover the entire surface.
  7. Skewer, Drizzle & Serve: Arrange the coated bites on a serving platter or slate board. Press a salted pretzel stick or decorative cocktail pick into the center of each ball. Drizzle with a thin ribbon of warm clover honey and serve immediately, or chill covered until party time!
