Prep & Pastry Shaping
- Preheat your oven to 375°F (190°C). Generously grease a 24-cup non-stick mini muffin tin with non-stick cooking spray or melted butter.
- Unroll the thawed puff pastry sheet onto a lightly floured surface or parchment paper. Using a pizza cutter or sharp chef’s knife, cut the sheet into 24 equal squares (a 4x6 grid).
- Gently press each pastry square into a cavity of the prepared mini muffin tin, allowing the corners to point upward above the rim.
Assembly & Baking
- Place one chilled cube of brie cheese into the center of each pastry cup.
- Spoon approximately 1 teaspoon of whole berry cranberry sauce directly over each brie cube, followed by a sprinkle of chopped toasted pecans and minced fresh rosemary.
- Bake on the middle rack for 12 to 14 minutes, or until the pastry corners are puffed, crisp, and golden-brown and the brie is fully melted and bubbling.
- Remove from the oven and let cool in the pan for 3 to 5 minutes so the cheese sets slightly. Run a small butter knife around the edges and transfer bites to a serving platter.
- Drizzle with warm honey, garnish with extra fresh rosemary sprigs and a tiny pinch of flaky sea salt, and serve immediately.
