Ingredients

  • 3 lbs halal beef chuck roast, trimmed of excess fat and cut into large 3-inch chunks
  • 3 whole chipotle peppers in adobo sauce, minced (plus 2 tbsp adobo sauce)
  • 1 cup halal beef bone broth
  • 5 cloves fresh garlic, minced
  • 1/4 cup fresh lime juice
  • 2 tbsp apple cider vinegar
  • 1 tbsp ground cumin
  • 1 tbsp Mexican oregano, crushed
  • 1/2 tsp ground cloves
  • 2 whole bay leaves
  • 1 1/2 tsp kosher salt and black pepper
  • 12 small white or yellow corn tortillas, warmed and charred
  • 1/2 cup white onion, finely diced (for serving)
  • 1/2 cup fresh cilantro, chopped (for serving)
  • 1/2 cup cotija cheese or queso fresco, crumbled (for serving)

Method

  1. In a blender or food processor, combine chipotle peppers, adobo sauce, beef bone broth, minced garlic, fresh lime juice, apple cider vinegar, cumin, Mexican oregano, ground cloves, salt, and black pepper. Blend until a smooth, fragrant red adobo sauce forms.
  2. Place the cubed halal beef chuck roast chunks into the bottom of a 6-quart slow cooker.
  3. Pour the blended adobo sauce all over the beef, turning pieces to coat thoroughly. Tuck the bay leaves into the liquid.
  4. Cover with lid and cook on LOW for 7 to 8 hours (or on HIGH for 4 to 5 hours) until the beef is meltingly tender and shreds effortlessly with a fork.
  5. Discard the bay leaves. Use two forks to shred the beef directly inside the slow cooker, allowing all the juicy meat strands to soak up the rich spiced adobo broth.
  6. Warm corn tortillas on a hot dry skillet until pliable and lightly charred.
  7. Pile shredded beef barbacoa into tortillas, top with diced white onion, chopped cilantro, crumbled cotija cheese, and serve with fresh lime wedges!
