Ingredients
  

  • 1.5 lbs boneless skinless halal chicken breasts or thighs cooked and shredded
  • 4 tbsp unsalted sweet cream butter 1/2 stick
  • 1 medium yellow onion finely chopped
  • 3 medium carrots sliced into 1/4-inch rounds
  • 2 stalks celery thinly sliced
  • 4 cloves fresh garlic minced
  • 0.33 cup all-purpose flour for thickening stew roux
  • 5 cups low-sodium halal chicken bone broth rich and golden
  • 0.5 cup heavy whipping cream (or whole milk) adds silky richness
  • 1 cup frozen sweet green peas thawed
  • 1 tsp fresh thyme leaves (or 1/2 tsp dried)
  • 1 tsp fine sea salt or to taste
  • 0.5 tsp freshly cracked black pepper
  • 2 cups all-purpose flour (for dumplings) spooned and leveled
  • 1 tbsp baking powder (for dumplings) gives dumplings fluffy lift
  • 0.5 tsp baking soda (for dumplings)
  • 0.75 tsp fine sea salt (for dumplings)
  • 4 tbsp cold unsalted butter cubed small
  • 0.88 cup cold buttermilk for tender dumpling crumb
  • 2 tbsp fresh chives or parsley finely minced

Method
 

  1. Sauté Mirepoix Aromatics: In a large 6-quart enameled Dutch oven or deep heavy skillet, melt the 4 tablespoons of butter over medium heat. Add the diced onion, carrots, and celery. Cook for 6-8 minutes until the vegetables soften and begin to sweeten. Stir in the minced garlic and fresh thyme, cooking for 60 seconds until fragrant.
  2. Build the Golden Gravy: Sprinkle the 1/3 cup of flour evenly over the vegetables. Stir constantly for 90 seconds to cook out the raw flour taste. Slowly pour in the chicken bone broth while whisking continuously to prevent lumps. Pour in the heavy cream. Bring to a gentle simmer and cook for 5 minutes until the gravy turns glossy, rich, and lightly thickened.
  3. Add Chicken & Peas: Fold in the shredded cooked halal chicken, green peas, sea salt, and black pepper. Bring the stew to a gentle, steady simmer over medium-low heat.
  4. Mix Buttermilk Dumpling Dough: In a medium bowl, whisk together the 2 cups of flour, baking powder, baking soda, and salt. Add the cold cubed butter and use a pastry cutter or clean fingertips to work the butter into the flour until coarse crumbs form. Stir in the fresh chives. Pour in the cold buttermilk and stir gently with a fork just until a soft, pillowy dough forms—do not overmix.
  5. Drop & Steam the Dumplings: Using a medium cookie scoop or two spoons, drop golf ball-sized portions of dumpling dough directly onto the bubbling stew surface, spacing them about 1 inch apart (makes about 10-12 dumplings). Immediately cover the Dutch oven with a tight-fitting lid, turn heat down to low, and steam undisturbed for 15 minutes. DO NOT lift the lid during steaming so the dumplings trap all the steam and puff up light as air.
  6. Garnish & Serve Hot: Remove the lid—the dumplings should be doubled in size, dry on top, and cooked through in the center like tender steamed biscuits. Ladle into shallow ceramic bowls, making sure each guest gets generous dumplings and creamy chicken stew. Garnish with cracked black pepper and fresh parsley!
