  • 1 lb Chicken breast diced
  • 1 cup Rice uncooked
  • 1 can Black beans drained and rinsed
  • 1 cup Corn frozen or canned
  • 1 cup Cheddar cheese shredded
  • 2 cups Chicken broth
  • 1 tbsp Olive oil
  • 1 tsp Cumin
  • 1 tsp Chili powder
  • 1 tsp Garlic powder
  • 1 tsp Onion powder

Method
 

Cooking Instructions
  1. Heat olive oil in a large pot over medium heat. Add diced chicken and cook until browned.
  2. Stir in rice, black beans, corn, chicken broth, cumin, chili powder, garlic powder, onion powder, salt, and pepper.
  3. Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes or until rice is cooked.
  4. Remove from heat and stir in shredded cheddar cheese until melted.
  5. Serve warm and enjoy!
