Ingredients
  

Chicken and Vegetables
  • 1 lb chicken breast diced
  • 1 cup bell pepper sliced
  • 1 cup onion sliced
  • 2 tablespoons fajita seasoning
Rice
  • 1 cup rice uncooked
  • 2 cups chicken broth

Method
 

Cooking the Chicken and Vegetables
  1. Heat a skillet over medium heat and add the diced chicken. Cook until browned.
  2. Add sliced bell pepper and onion to the skillet, and sprinkle with fajita seasoning. Cook until vegetables are tender.
Cooking the Rice
  1. In a pot, combine the rice and chicken broth. Bring to a boil, then reduce heat and cover. Cook until rice is tender.
Combining
  1. Once the rice is cooked, combine it with the chicken and vegetable mixture in the skillet. Stir well to combine.
