Ingredients
  

Crepes
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup milk
  • 1 tbsp butter melted
  • 1 pinch salt
Filling
  • 2 cups cooked chicken shredded
  • 1 cup cream cheese softened
  • 1 cup spinach cooked and chopped
  • 1 cup cheddar cheese shredded
  • 1 tbsp garlic minced

Method
 

Make the crepes
  1. In a mixing bowl, whisk together flour, eggs, milk, melted butter, and salt until smooth.
  2. Heat a crepe pan over medium heat and pour in a small amount of batter, swirling to cover the pan.
  3. Cook for 1-2 minutes until the edges lift, then flip and cook for another minute.
  4. Repeat until all batter is used, stacking crepes on a plate.
Prepare the filling
  1. In a bowl, combine shredded chicken, cream cheese, spinach, cheddar cheese, and garlic.
  2. Mix until well combined.
Assemble the pockets
  1. Take a crepe, place a portion of the filling in the center, and fold the crepe over the filling.
  2. Repeat with remaining crepes and filling.
Serve
  1. Serve warm, optionally with a side salad.
