  • 2 cups Cooked chicken, shredded
  • 1 large Avocado, diced
  • 4 slices Bacon, cooked and crumbled
  • 4 cups Mixed greens
  • 1/4 cup Cherry tomatoes, halved
  • 1/4 cup Red onion, thinly sliced
  • 1/4 cup Feta cheese, crumbled
Dressing
  • 3 tablespoons Olive oil
  • 1 tablespoon Balsamic vinegar
  • 1 teaspoon Dijon mustard

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the shredded chicken, diced avocado, crumbled bacon, mixed greens, cherry tomatoes, red onion, and feta cheese.
  2. In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, salt, and pepper.
  3. Drizzle the dressing over the salad and toss gently to combine.
