  • 4 pieces chicken thighs boneless, skinless
  • 1 cup red wine preferably Burgundy
  • 2 tablespoons olive oil
  • 1 cup mushrooms sliced
  • 1 cup carrots sliced
  • 1 cup onion chopped
  • 2 cloves garlic minced
  • 2 tablespoons flour for thickening
  • 1 cup chicken broth
  • 1 teaspoon thyme dried
  • 1 teaspoon bay leaf
  • to taste salt
  • to taste pepper

Method
 

Cooking Instructions
  1. Heat olive oil in a large skillet over medium heat. Add the chicken thighs and brown on all sides.
  2. Remove chicken and set aside. In the same skillet, add onions, carrots, and mushrooms. Sauté until softened.
  3. Add garlic and cook for another minute. Sprinkle flour over the vegetables and stir to combine.
  4. Pour in the red wine and chicken broth, stirring to deglaze the pan. Add thyme, bay leaf, salt, and pepper.
  5. Return the chicken to the skillet, cover, and simmer for 30 minutes until the chicken is cooked through.
  6. Serve hot, garnished with fresh herbs if desired.
