Ingredients
  

Tart Base
  • 1 sheet puff pastry thawed
Filling
  • 2 cups onions sliced
  • 1 cup goat cheese crumbled
  • 2 tablespoons olive oil for caramelizing onions
  • 1 teaspoon thyme fresh or dried
  • salt to taste
  • pepper to taste

Method
 

Prepare the Onions
  1. Heat olive oil in a pan over medium heat, add sliced onions, and cook until caramelized, about 20 minutes.
Assemble the Tarts
  1. Roll out the puff pastry and cut into squares. Place on a baking sheet.
  2. Spread the caramelized onions over the pastry, then sprinkle with goat cheese and thyme.
Bake
  1. Bake in a preheated oven at 400°F (200°C) for 15 minutes or until golden brown.
