Ingredients
  

Meatballs
  • 1 pound ground beef
  • 1 cup bread crumbs
  • 1 large egg
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon salt
Stew
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 medium bell pepper, chopped
  • 1 can diced tomatoes 14.5 oz
  • 4 cups beef broth
  • 1 cup green beans
  • 1 cup corn
  • 1 teaspoon black pepper

Method
 

Prepare Meatballs
  1. In a mixing bowl, combine ground beef, bread crumbs, egg, Cajun seasoning, and salt. Mix until well combined.
  2. Form the mixture into meatballs, about 1 inch in diameter.
Cook Stew
  1. In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, sauté until softened.
  2. Add bell pepper and cook for another 2-3 minutes.
  3. Stir in diced tomatoes, beef broth, green beans, corn, and black pepper. Bring to a simmer.
  4. Add meatballs to the pot and cook for 20-25 minutes until meatballs are cooked through.
