Potatoes
  • 2 pounds potatoes cut into cubes
  • 3 tablespoons olive oil for roasting
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 lemon lemon juice freshly squeezed
  • 2 tablespoons fresh parsley chopped for garnish

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. In a mixing bowl, toss the cubed potatoes with olive oil, paprika, cumin, salt, and black pepper until well coated.
  3. Spread the potatoes in a single layer on a baking sheet.
  4. Roast in the preheated oven for about 30 minutes, or until crispy and golden brown, stirring halfway through.
  5. Remove from the oven and drizzle with lemon juice. Garnish with chopped parsley before serving.
