Chicken
  • 2 cups cooked chicken shredded
Vegetables
  • 1 cup mixed greens
  • 1 cup cucumber sliced
  • 1 cup carrots shredded
Sauce
  • 1/2 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon sriracha optional for heat

Method
 

Prepare the Chicken
  1. Grill the chicken until fully cooked and then shred it.
Make the Sauce
  1. In a mixing bowl, whisk together mayonnaise, sweet chili sauce, soy sauce, and sriracha.
Assemble the Salad
  1. In a large bowl, combine mixed greens, cucumber, carrots, and shredded chicken. Drizzle with sauce and toss to combine.
