Prepare the Chicken
- Marinate the chicken thighs with harissa paste and olive oil for at least 30 minutes.
- Preheat the air fryer to 400°F (200°C).
- Place the marinated chicken in the air fryer and cook for 25 minutes, flipping halfway through.
Prepare the Couscous
- In a pot, bring vegetable broth to a boil.
- Add couscous, cover, and remove from heat. Let it sit for 5 minutes.
- Fluff couscous with a fork and mix in parsley, mint, and lemon zest.
Serve
- Serve the harissa chicken over the herby couscous.
