Ingredients
  

Chicken
  • 4 pieces chicken thighs boneless
  • 2 tablespoons harissa paste
  • 1 tablespoon olive oil
Couscous
  • 1 cup couscous
  • 1 cup vegetable broth
  • 1 tablespoon fresh parsley chopped
  • 1 tablespoon fresh mint chopped
  • 1 lemon zest

Method
 

Prepare the Chicken
  1. Marinate the chicken thighs with harissa paste and olive oil for at least 30 minutes.
  2. Preheat the air fryer to 400°F (200°C).
  3. Place the marinated chicken in the air fryer and cook for 25 minutes, flipping halfway through.
Prepare the Couscous
  1. In a pot, bring vegetable broth to a boil.
  2. Add couscous, cover, and remove from heat. Let it sit for 5 minutes.
  3. Fluff couscous with a fork and mix in parsley, mint, and lemon zest.
Serve
  1. Serve the harissa chicken over the herby couscous.
