Ingredients
  

Salad Ingredients
  • 1 head cauliflower cut into florets
  • 1 can chickpeas drained and rinsed
  • 2 tablespoons olive oil for roasting
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 cup mixed greens
Tahini Dressing
  • 3 tablespoons tahini
  • 2 tablespoons lemon juice
  • 1 clove garlic minced
  • 2 tablespoons water to thin the dressing
  • 1 pinch salt

Method
 

Prepare the Salad
  1. Preheat the air fryer to 400°F (200°C).
  2. In a bowl, toss cauliflower florets and chickpeas with olive oil, salt, and pepper.
  3. Place the mixture in the air fryer basket and cook for 15-20 minutes, shaking halfway through.
  4. Once cooked, let it cool slightly and then combine with mixed greens.
Make the Dressing
  1. In a small bowl, whisk together tahini, lemon juice, minced garlic, and water until smooth.
  2. Add a pinch of salt to taste.
Combine and Serve
  1. Drizzle the tahini dressing over the salad and toss to combine.
  2. Serve immediately and enjoy!
