Prepare the Filling
- In a bowl, combine the diced apples, sugar, cinnamon, and lemon juice. Mix well.
Assemble the Pies
- Roll out the pie crusts and cut them into circles. Place a spoonful of the apple filling on one half of each circle.
- Fold the dough over to create a pocket and seal the edges with a fork.
- Brush the tops with egg wash.
Cook the Pies
- Preheat the air fryer to 350°F (175°C). Place the hand pies in the air fryer basket in a single layer.
- Cook for 12-15 minutes or until golden brown.
