- 1 cup water (for cooking)
- 2 tbsp low-sodium soy sauce
- 1 cup dashi stock
- 2 tbsp mirin
- 1 tsp wasabi (optional)
Instructions
- Cook the soba noodles in boiling water for 4-6 minutes until al dente. Drain and rinse under cold water until chilled.
- In a saucepan, mix soy sauce, dashi stock, mirin, and wasabi over medium heat until warm; do not boil.
- Serve the chilled noodles on plates with dipping sauce in small bowls.
- Optional: Garnish with sliced green onions or sesame seeds.
