Instructions
- Preheat your oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
- Coat the chicken breasts in olive oil and season generously with smoked paprika, salt, and pepper.
- In an oven-safe skillet over medium-high heat, sear the chicken for 4-5 minutes on each side until golden brown.
- In another pan, melt butter over medium heat, sauté minced garlic until fragrant, add spinach until wilted, then stir in heavy cream and Parmesan until creamy.
- Pour the creamed spinach over the seared chicken in the skillet. Transfer to the oven and bake for 15-20 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
- Let rest briefly before serving, drizzling any remaining sauce over the chicken.
