- 4 boneless, skinless chicken breasts (about 1 lb)
- 3 cloves fresh garlic, minced
- 2 medium carrots, diced
- 2 stalks celery, chopped
- 1 medium onion, diced
- 4 cups low-sodium chicken broth
- 8 oz cream cheese
- 1 tsp dried oregano
- 1 tsp dried thyme
- 16 oz fresh or frozen gnocchi
- 2 cups spinach or kale
Instructions
- Prepare your ingredients by dicing the onions, carrots, and celery. Mince the garlic.
- In a slow cooker, combine the chopped veggies and chicken breasts. Pour in the chicken broth.
- Add oregano, thyme, salt, and pepper to taste.
- Cover and cook on low for 6 hours or high for 4 hours.
- Once cooked, shred the chicken using two forks and return it to the pot with cream cheese.
- Stir in gnocchi and greens; cook on high for an additional 30 minutes until gnocchi are tender.
