- 2 large leeks, trimmed and sliced

- 1 cup heavy cream

Instructions
- Preheat oven to 400°F (200°C). Roll out puff pastry on a floured surface to fit a tart pan, pressing firmly into the edges.
- Sauté sliced leeks in butter over medium heat for about 10 minutes until soft and caramelized. Allow to cool slightly.
- In a bowl, whisk together heavy cream, eggs, salt, and pepper until smooth.
- Spread sautéed leeks evenly over the pastry crust and pour the cream mixture on top.
- Bake for 30-35 minutes until golden brown and set in the center.
- Let cool slightly before slicing; serve warm or at room temperature.
