Instructions
- Prepare the custard: In a bowl, whisk together eggs, milk, cinnamon, and brown sugar until smooth. Soak each slice of bread in the mixture for about two minutes per side.
- Cook the French toast: Heat a nonstick skillet over medium heat and melt some butter. Add soaked bread slices and cook until golden brown on both sides, about three minutes each. Keep warm in a low oven.
- Make the caramelized banana sauce: In another skillet, melt butter over medium heat. Stir in brown sugar until melted, then add sliced bananas and cook for about two minutes until tender.
- Add rum (optional): Carefully add dark rum to the banana mixture and flambé if desired.
- Serve: Place French toast on plates, top generously with caramelized bananas and sauce, then serve immediately with optional whipped cream or powdered sugar.
